Almond Slices (Mondel schnits)
1/2 cp sugar
3/4 cp flour
1/2 tsp baking powder
3/4 cp sliced almonds
2 tbsp ice water
1/2 tsp lemon extract or juice of 1/2 lemon
2 tbsp sugar for top of cake
1 - The almonds need not be blanched-merely sliced fine.
2 - WSift flour and baking powder together, then set aside.
3 - Cream the eggs and sugar thoroughly.
4 - Add the extract and w3ater and beat hard.
5 - Add the sliced nuts and flour, beating lightly until thoroughly mixed.
6 - Pour the batter into a greased pan, sprinkle sugar over the top and bake in a moderate (350 degrees F.) oven until brown.
7 - Allow the cake to cool in pan before cutting in slices.
