Coffee Cake (Kaffee Kuchen)
1/2 cp butter
1 egg, separated
3/4 cp sugar
4 cps flour
1 yeast cake dissolved in 1/3 cp lukewarm water
1 - Scald the milk and set aside to cool.
2 - Cream the sugar, butter, and egg yolk.
3 - Add to this the li=ukewarm milk, alternately with the flour and the dissolved yeast cake.
4 - Beat lightly and add the stiffly beaten egg white.
5 - Allow this mixture to rise over night.
6 - Flour a bake-board and take out large spoonfuls of dough to which just enough flour has been added to permit it to be rolled into flat cakes.
7 - Spread on well-greased pie tins and when light (about 1 1/2 hours), brush melted butter over the top and strew thickly with brown sugar.
8 - If preferred, spread "rivels on top by combining 1/2 cp sugar, 1/2 cp flour, 2 tbsp butter.
9 - Crumble together and sprinkle on top of cakes.
10 - Bake in hot oven (400 degrees F.) about 20 minutes.
