2 large potatoes
1 cp sugar
1 tsp salt
1/4 tsp nutmeg
1/2 cp lard or other shortening
1 yeast cake, dissolved in 1/2 cp warm water
1 - Boil the pared potatoes in enough water to cover them.
2 - Drain off the potato water and save.
3 - Mash the potatoes and beat lightly.
4 - Measure the potato water and add more water if necessary to make 1 1/2 pints.
5 - Combine with the rest of the ingredients, using enough flour to make a rather stiff batter.
6 - Cover and let rise in a warm place until morning.
7 - Knead in the morning, adding as much flour as is necessary.
8 - Let rise again.
9 - Spread on well-greased tins and when light (about 1 1/4 hours), brush melted butter over top.
10 - Strew with "rivels" as in Coffee Cake III recipe)
