Moravian Christmas Loaf
3 cps milk, scalded
1 cp butter
1 cp sugar
1/2 yeast cake dissolved in 1/4 cp warm water
6 to 8 cps flour
1 tsp salt
1/2 lb raisins, cut
1/2 lb currants
1/4 lb citron, chopped
1/2 cp almonds, sliced and blanched
1 - Scald 2 cps of the milk and let cool.
2 - Add the dissolved yeast cake, 3 cps flour and the salt.
3 - Mix well.
4 - Cover and set aside to rise in a warm place over night.
5 - In the morning, scald the other cp of milk and add the butter and stir until melted.
6 - Combine with the yeast mixture and add the sugar and the balance of the flour, kneading the dough well, until it is no longer sticky.
7 - Use more flour if necessary.
8 - Combine the fruit and sprinkle with some flour and add to the dough, mixing well.
9 - Cover and let rise again until double in bulk.
10 - Shape in small loaves, place in small pans, and sprinkle with sliced almonds.
11 - Let rise 2 hours.
12 - Bake in a moderate oven (400 degrees F.) for 40 minutes.
