Molasses Shoo-Fly Cake (Molasses Crumb Pie)
1/2 cp molasses
1 egg yolk, well beatren
1/2 tsp soda dissolved in 3/4 cp boiling water
3/4 cp flour
1/2 cp brown sugar
2 tbsp shortening
1/8 tsp nutmeg
1/8 tsp ginger
1/8 tsp cloves
1/2 tsp cinnamon
1/4 tsp salt
1 - Combine the above dry ingreients, working in the shortening.
2 - Line a pie pan with pastry.
3 - Make alternate layers of crumbs and liquid.
4 - Top with crumbs and bake in a hot oven (450 degrees F.) until crust edges start to brown.
5 - Reduce heat to moderate oven (350 degrees F.) and bake until firm (about 20 minutes).
