1 cp rice
2 qts boiling water
1 tbsp salt
3/4 cp sugar
1/2 cp raisins
1/2 tsp cinnamon
1 qt milk
1 - Add salt to the boiling water and after washing the rice in several waters, stir slowly into the boiling water.
2 - Cook without stirring for 20 or 25 minutes or until rice is tender.
3 - Drain off water.
4 - Beat the yolks of eggs and add the sugar and mix well with the milk.
5 - Stir into the cooked rice and mix well.
6 - Add the cinnamon and raisins.
7 - Beat the whites of eggs stiff and fold into the rice mixture.
8 - Pour into buttered baking dish and bake in moderately slow oven (325 degrees F.) for 1 hour.
