2 hard-cooked yolks of eggs
1 raw yolk of egg
1/2 tsp mustard
1/2 tsp salt (scant)
2 tsp vinegar
juice of 1/2 lemon
1/2 cp olive oil
1 - Mash and work smooth the hard cooked yolks of eggs; stir in with tablespoon the raw yolk of egg and mustard; work smooth.
2 - Add the oil by the tablespoonful and when half the oil has been used, add vinegar and lemon juice; working them in very slowly.
3 - Add salt and paprika and slowly work in the remao=ining oil.
4 - If a greater quantity of mayonnaise is desired, continue to add oil, lemon juice and vinegar until the original quantity is almost doubled.
5 - Use only a tablespoon in working the dressing.
