Lebanon County Rhubarb Jam
2 1/2 lbs rhubarb
1 1/2 lbs sugar
1/2 cp water
2 oranges (rind and juice)
1 - Wash an skin rhubarb and cut into small pieces; add sugar and 1/2 cp of cold water.
2 - Grate the rind of oranges and add to the rhubarb.
3 - Add the orange juice and rind and cook for 30 minutes, stirring occasionally.
4 - Pour into sterilized glasses and seal.
