Ham and Cheese Frittata

    1/3 cp onion, chopped fine
    1/3 cp green pepper, chopped fine
    2 tbsp olive oil
    4 large eggs
    1/2 cp boiled ham, chopped
    1/2p grated cheese(cheddar, swiss, or other)


    1 - In an oven proof 9" skillet heat olive oil
    2 - Add onion and green pepper over moderately low heat with stirring
    until green pepper is soft. 3 - In a bowl whisk together the ham and eggs, and salt & pepper to taste
    4 - Add this to the skillet and cook for 8-10 minutes over moderate heat
    or until the edges are set but the center is still soft. 5 - Sprinkle the grated cheese evenly over all, then put under broiler
    until the cheese is melted. 6 - Remove and cut into wedges to serve.
    Comments - Sounds like a good recipe similar to one I make in my own kitchen!
