Oatmeal Griddle Cakes
2 cps cooked oatmeal
1 1/3 cps milk
2 eggs separated
1/3 cp melted shortening
1/3 cp sifted enriched all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 - Beat egg yolks into the oatmeal.
2 - Add milk and sifted dry ingredients, alternately.
3 - Add melted shortening and fold in the egg whites.
4 - Drop by spoonfuls onto greased hot griddle.
5 - Reduce heat to medium after first baking.
6 - If prepared the previous night, do not add the beaten egg whites until just before baking.
