Peach Griddle Cakes
1 tbsp shortening
1/4 cp sugar
2 cps sifted enriched all purpose flour
3 tsp baking powder
1/2 tsp salt
1 1/4 cp milk
1/2 tsp lemon juice
1/2 tsp vanilla
1 1/2 cps chopped peaches(fresh or canned)
1 - Cream the shortening and sugar, then add the eggs and
2 - Sift the dry ingredients together and add alternately with the milk.
3 - Fold in lemon juice, vanilla and peaches.
4 - Drop by spoonfuls on hot greased griddle.
5 - Cook until golden brown on each side, then sprinkle with powdered sugar.
