Lemon Oatmeal Cookies

    1 cp shortening
    3/4 cp brown sugar
    2 eggs
    1/2 cp dark corn syrup
    2 cps sifted enriched all-purpose flour
    1/4 tsp salt
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 cp milk
    1 tsp vanilla
    2 1/2 cps quick-cooking oats
    4 1/2 tsp grated lemon rind

    Instructions

    1 - Cream shortening and sugar, add eggs and beat well.
    2 - Add corn syrup and beat thoroughly.
    3 - Sift flour with baking powder and baking soda.
    4 - Add alternately to creamed mixture with milk and vanilla.
    5 - Add oatmeal and lemon rind, beating well.
    6 - Drop by teaspoonfuls onto a greased cookie sheet.
    7 - Bake 12 minutes in a preheated 375 degree oven.
