2/3 cp high fat soya flour
1/2 cp shortening
1 cp white sugar
1 tsp grated lemon rind
1 1/2 cp sifted, enriched all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 - Cream together soya flour, shortening and sugar.
2 - Add eggs and lemon rind, beating well.
3 - Sift flour, baking powder, salt, and nutmeg together.
4 - Add to the creamed mixture and blend thoroughly.
5 - Shape into a roll and cover with wax paper.
6 - Place in the refrigerator for at least 2 hours.
7 - Slice into 1/4 " thick pieces and put on ungreased cookie sheet.
8 - Bake 12 minutes at 375 degrees.
Recipe Amount - four to five dozen cookies.
