Crumb Souffle'

    Source: Health for Victory Club (WWII vintage)

    2 cps milk
    2 tbsp sugar
    2 eggs
    1/8 tsp salt
    1/2 cp soft bread crumbs
    3 tbsp butter or fortified margerine
    1/2 tsp vanilla
    1/2 tsp lemon extract


    1 - Pour milk on crumbs, add sugar and butter or margerine.
    2 - Heat to boiling point, then remove from the heat.
    3 - Add flavoring and beaten egg yolks
    4 - Add salt to egg whites and beat until stiff.
    5 - Fold cooked mixture into the egg whites and mix lightly
    but thoroughly.
    6 - Pour into a greased baking dish.
    7 - Set dish in a pan of water and bake at 350 degrees for 1 hour
