Deep Dish Plum Pudding

    Source: Health for Victory Club (WWII vintage)

    3 cps unsweetened chopped plums
    3/4 cp light corn syrup
    1/4 tsp cinnamon
    1/4 tsp nutmeg
    2 tbsp shortening

    Instructions

    1 - Wash, pit and chop plums.
    2 - Add corn syrup and spices.
    3 - Pour into a shallow greased baking dish.
    4 - Dot the plums with the shortening.
    5 - Cover with the crust (recipe below)

    Crust

    1 1/2 cps sifted enriched all-purpose flour
    2 tsp baking powder
    1/2 tsp salt
    6 tbsp shortening
    1/2 cp milk
    2 tbsp sugar

    Intructions

    1 - Sift flour with baking powder and salt.
    2 - Add milk to make a soft dough.
    3 - Roll out to 1/2" thick.
    4 - Make a couple of slashes for steam to escape.
    5 - Place over fruit to fit dish
    6 - Sprinkle crust with sugar 7 - Bake 45 minutes in preheated 400 degree oven.
