Floating Island

    3 1/4 cps milk
    1/2 cp sugar
    1/8 tsp salt
    2 tbsp corn starch
    1/4 cp cold milk
    3 egg yolks
    3/4 tsp orange extract
    1 tsp grated orange rind

    Instructions

    1 - Scald milk, add sugar and salt, stir in cornstarch which
    has been mixed with 1/4 cp of cold milk.
    2 - Cook the mixture until it thickens on low heat.
    3 - Beat egg yolks and stir in a small amount of hot custard
    and add to the custard and cook 3 minutes longer stirring
    constantly. 4 - Add flavoring and grated rind.
    5 - Pour into dish and chill.
    6 - Serve meringue on top of custard

    Meringue for Top of Custard

    3 egg whites
    6 tbsp powdered sugar
    1/2 tsp vanilla

    1 - Beat egg whites until stiff but not dry.
    2 - Gradually add sugar and beat until all is dissolved
    3 - Add vanilla

    Recipe Amount - Serves 6
