Gingerbread Upside-Down Cake

    Source: Health for Victory Club (WWII vintage)

    1/4 cp shortening
    1/3 cp. sugar
    1 egg
    1/2 cp molasses
    1 1/3 cps sifted enriched all-purpose flour
    1/4 tsp salt
    1 1/2 tsp baking powder
    1 tsp baking soda
    3/4 tsp cinnamon
    3/4 tsp ginger
    1/2 cp sour milk

    Bottom of Pan:

    2 tbsp butter or fortified margerine
    1/2 cp. light corn syrup
    1/3 cp nuts
    2 sliced oranges or apples

    Instructions

    1 - Cream shortening and sugar.
    2 - Add eggs, beat well, then add molasses and blend.
    3 - Sift dry ingredients and add alternately with
    milk to the creamed mixture.
    4 - To prepare pan: melt butter or margerine in pan.
    5 - Add corn syrup and blend, then arrange fruits and nuts.
    6 - Pour batter over fruitand bake.
    7 - Turn cake out of pan immediately after removing from
    the oven.
    8 - Use 7" X 11 1/2" pan and bake in preheated 375 degree oven for 35 minutes.

    Recipe amount - serves 6-8.
