Hungarian Plum Cake

    Source: Health for Victory Club (WWII vintage)

    1/2 cp butter or fortified margerine
    1/2 cp sugar
    2 eggs
    1 cp sifteed enriched all-purpose flour
    1 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp lemon extract

    Topping:

    10 canned or stewed plum halves
    1/2 cp sugar
    1 tsp cinnamon

    Instructions

    1 - Cream butter or margerine, add sugar and cream until light.
    2 - Beat after adding each egg.
    3 - Add flour which has been sifted with baking powder,
    salt and cinnamon.
    4 - Add flavoring then pour into a well greased 11" X 6" X 2" pan
    5 - Press the plums into the batter.
    6 - Sprinkle the top with mixture of sugar and cinnamon.
    7 - Bake for 30 minutes in a preheated 400 degree oven.
