Lemon Sponge Cups
2 tbsp butter or fortified margerine
3/4 cp sugar
4 tbsp enriched all-purpose flour
1/4 tsp salt
5 tbsp lemon juice
1 tbsp grated lemon rind
3 eggs, separated
1 1/2 cps milk
1 - Cream butter or margerine, add sugar, flour, salt, lemon juice
and lemon rind.
2 - Add the well beaten egg yolks which have been mixed with the milk.
3 - Fold in the stiffly beaten egg whites.
4 - Pour into greased custard cups.
5 - Set the cups in a pan of water and bake at 350 degrees for 45 minutes.
6 - Cool and unmold.
