Peach Upside-Down Cake

    1/4 cp shortening
    1/2 cp sugar
    1 cp sifted cake flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    1/4 cp milk
    1 tsp vanilla

    Instructions

    1 - Cream shortening and sugar.
    2 - Add eggs and beat thoroughly.
    3 - Stir dry ingredients together and add alternately with milk to the creamed mixture.
    4 - Add flavoring

    Bottom of Pan

    2 tbsp butter or fortified shortening.
    1/2 cp brown sugar
    1 tsp grated lemon rind
    1 1/2 cps sliced peaches

    5 - Melt butter or margerine in 9" round cake pan. 6 - Sprinkle brown sugar evenly over it
    7 - Add grated lemon rind and arrange peaches the desired way.
    8 - Pour batter over this and bake for 30 minutes in a preheated 375 degree oven.
    9 - Turn out immediately.
