Poached Eggs on Creamed Toast

    4 tbsp butter or fortified margerine
    4 tbsp enriched all-purpose flour
    2 cps milk
    1/2 tsp salt
    1/8/tsp pepper
    5 slices of toast
    5 poached eggs
    Chopped parsley


    1 - Melt butter or margerine, add flour abd blend well.
    2 - Add milk and stir constantly until sauce thickens.
    3 - Add salt & pepper and toast bread and keep[ warm until eggs are poached. 4 - Lay slices of toast on serving platter, pour boiling sauce over them.
    5 - Place one poached egg on each slice, sprinkle with parsley and serve.
