Baked Eggs in Tomato Sauce
3 cps canned tomato juice
1 small onion, chopped
1 clove garlic, chopped
1 small piece bay leaf
3 whole cloves
3 tbsp butter or fortified margerine
3 tbsp flour
6 hard cooked eggs
1 tsp salt
1/8 tsp pepper
1/2 cp buttered bread crumbs
1/2 cp grated cheese
1 - Heat tomato juice with onions, garlic, bay leaf, and cloves for 10 minutes.
2 - Blend flour and butter or margerine and strain toato juice over it stirring until smooth.
3 - Cook until thickened then season.
4 - Cut hard boiled eggs in halves and place in a 2 qt greased casserole.
5 - Pour tomato sauce over eggs and top with crumbs which have been well mixed with cheese.
6 - Bake in preheated 350 degree oven for 20 minutes.
