Salmon in Casserole
2 cps fine noodles.
2 tbsp butter or fortified margerine.
2 tbsp enriched all purpose flour.
1 cp milk
1 tsp salt
1/8 tsp pepper
1 large can salmon
2 sliced hard cooked eggs
3/4 cp dry bread crumbs
1 - Cook noodles in boiling salted water 8 minutes, then drain.
2 - Make a white sauce by melting the butter or margerine, add the
flour and stir well.
3 - Add the milk slowly stirring constantly untl smooth and thick
4 - Add salt and pepper.
5 - Into a greased casserole place half the white sauce and the noodles.
6 - Break salmon into medium size pieces and lay on top of the noodles.
7 - Top salmon with withe the sliced hard cooked eggs.
8 - Pour the remaining white sauce over the eggs and top with bread crumbs.
9 Bake in 400 degree oven - 25 minutes if preheated, 3o minutes if not.
