2 lbs summer apples
3/4 to 1 cp water
1/2 cp sugar
1/4 tsp cinnamon
1 - Wash apples and remove the stem and blossom ends.
2 - Cut into quarters. Do not peel. Put into a saucepan and add water.
3 - Cover, bring to a boil, then simmer until apples are soft.
4 - Put through a ricer or a coarse sieve.
5 - Add sugar and flavoring. Heat throroughly so sugar dissolves.
