Beef, Corn, and Tomato Stuffed Peppers
6 green peppers
2 tbsp chopped onion
1/4 lb ground beef
1 cp. chopped tomatoes
1 cp canned or fresh corn
1 1/2 tsp salt
1/8 tsp pepper
1/2 cp buttered bread crumbs
1 - Cut tops from peppers and rmove seeds.
2 - Precook peppers for 5 minutes in boiling water and invert to drain.
3 - Brown the onion and beef then add tomato, corn and seasonings.
4 - Stuff the peppers and top with bread crumbs.
5 - Place the peppers in a greased casserole.
6 - Add 1/2" hot water.
7 - Bake uncovered in a preheated oven at 350 degrees for 35 minutes.
