Polish Stuffed Cabbage
3 tbsp rice(uncooked) or 1/2 cp cooked
1 lb ground beef and pork
1 egg, well beaten
2 tbsp minced onions
2 tsp salt
1/2 tsp pepper
8 medium to large cabbage leaves
2 1/2 cans canned tomatoes
2 tbsp enriched all-purpose flour
4 tbsp sour cream
1/2 tsp salt
1 - Cook rice in boiling salted water until tenderthen drain and rinse
2 - Mix rice, ground meat, egg, onion, 2 tsp salt, and pepper.
3 - Steam cabbage leaves in 1/2 cp water for 10 minutes.
4 - Put meat mixture into the cabbage leaves (1/3 cp for each leaf)
5 - Fold leaf over meat and fasten with a toothpick.
6 - Arrange in a saucepan, add tomatoes and bring to a boil.
7 - Simmer for 1 1/2 hours.
8 - Mix flour, sour cream, and 1/2 tsp salt to a smooth paste.
9 - Remove stuffed cabbage to a deep serving dish and stir flour and cream mixture into the tomatoes.
10 - Bring to a quick boil, then pour over the cabbage rolls.
