Cooked Salad Dressing
1 tbsp drippings or shortening
1 tbsp enriched all-purpose flour
2 tsp sugar
1/2 tsp dry mustard
1/8 tsp pepper
1/2 tsp salt
1/2 cp vinegar
Yolk of 1 egg
1 - Melt shortening and blend in the flour.
2 - Add the vinegar and stir until the mixture thickens.
3 - Mix together the sugar, mustard, salt and pepper and add to the liquid.
4 - Cook for 4 minutes.
5 - Pour over the beaten egg yolk and mix well.
6 - Return to the heat and cook 1 minute longer.
