Deviled Egg Salad
6 hard cooked eggs
3 tbsp mayonnaise
1 1/2 tbsp lemon juice
3/4 tsp dry mustard
1/2 tsp salt
1/8 tsp pepper
1/2 tsp Worcestershire sauce(optional)
1 - Peel and cut eggs in half lengthwise.
2 - Remove yolks and mash fine.
3 - To the mashed yolks, add the mayonnaise, lemon juice, dry mustard, salt, pepper and Worcestershire sauce.
4 - Mix well and fill halves of egg whites.
5 - Cut halves once more, making quarters.
6 - Arrange 4 quarters on a lettuce leaf and serve with additional mayonnaise.
7 - A dash of paprika and small pieces of parsley are a desireable garnish
