2 tbsp enriched all-purpose flour
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp sugar
1/2 cp cold water
1 egg yolk
2 tbsp vinegar
1/2 cp salad oil
1 - Mix flour with dry ingredients in a small sauce-pan.
2 - Stir in water gradually, so there will be no lumps.
3 - Stir over low heat until mixture thickens.(if heat cannot be controlled use a double boiler)
4 - Remove from the range.
5 - Put egg yolk, vinegar, and oil in small bowl.
6 - Add the hot paste and beat vigorously until cool.
7 - The dressing will thicken on cooling
Variation - Russian Dressing
Into 1 cp mayonnaise, fold 1 hardcooked egg, chopped, 1/4 cp chili sauce, 2 tbsp chopped green pepper.
Variation: - Thousand Island Dressing:
Into 1 cp mayonnaise, fold 2 tbsp chili sauce, 2 tbsp chopped green pepper, 2 tbsp pimiento, 2 tbsp chopped sweet pickle.
