Macaroni Surprise Salad
2 cps macaroni
3 hard-cooked eggs
1/3 cp chopped green pepper
1/3 cp minced onion
2 tbsp chopped celery
1/2 cp chopped sweet pickle
2 tbsp chopped pimiento(optional)
1/2 cp grated peanuts or salted soyas
1 tsp salt
1/8 tsp pepper
1 cp salad dressing
1 - Cook macaroni in boiling salted water 9 - 12 minutes, then drain and rinse.
2 - Dice hard-cooked eggs and mix all ingredients thoroughly.
3 - Chill, then serve on salad greens.
Soften 2 tbsp plain gelatin in 1/2 cp of tomato juice.
Dissolve in 3 cps boiling tomato juice.
Add 1 tsp salt, 1/8 tsp pepper and 1 tbsp Worcestershire sauce.
Chill until the mixture begins to congeal.
Add Macaroni Surprise Salad.
Mold and serve on salad greens.
