Cream of Celery Soup

    Source: Health for Victory Club (WWII vintage)

    4 tbsp butter or fortified margerine
    4 tbsp enriched all purpose flour
    dash of paprika and pepper
    1 tsp grated onion
    1 1/2 tsp salt
    2 cps milk
    1 cp cooked celery, diced
    2 cps celery water

    Instructions

    1 - Melt butter or margerine on high heat. h
    2 - Add flour and seasonings.
    3 - Add milk and cook until thickened.
    4 - When thickened add celery and celery water.
    5 - Turn to simmer and continue cooking for 35 minutes.
    Recipe amount - serves 4 to 5
