Corn and Lima Bean Chowder
1 cp dried lima beans
2 cps water
1 tsp salt
2 tbsp chopped onion
1/4 cp drippings or shortening
1 cp diced celery
1 1/2 cps whole kernal corn
2 tsp salt
1 tsp sugar
1/8 tsp black pepper
1/2 cp water
3 cps milk
1 - Soak dried lima beans in 2 cps water for several hours.
2 - Add salt and cook until tender.(should make 2 cps of cooked beans)
3 - Lightly brown onion in the shortening.
4 - Add celery, shole kernal corn, salt, sugar, pepper and water.
5 - Simmer for 1/2 hour.
6 - Add 2 cps cooked dried lima beans and the milk
7 - Heat thoroughly and serve.
Recipe amount - serves 6 generously.
Advance preparation: Fix entire chowder with the exception of lima beans and milk.
Cool and store in the refrigerator. Just before serving, add the beans and milk and heat thoroughly.
Variation: Cook 2 cps green lima beans in 1/2 cp water until tender.
