Liver Sandwich Filling
1 chopped onion
1 tbsp butter or fortified margerine
2 hard-cooked eggs
2/3 lb steamed pork liver
1/3 cp cream
salt and pepper
1 - Steam liver 25 minutes in a deep well cooker, or tightly covered pan.
2 - Cool and pu through meat grinder.
3 - Mince eggs.
4 - Brown onion in melted butter or fortified margerine until light brown.
5 - Mix all ingredients well.
6 - Spread on enriched white or whole wheat bread.
7 - Store in refrigerator.
