Cream of Corn Soup
2 cps corn (canned or leftover)
2 cps boiling water
2 cps milk
1 slice onion
2 tbsp butter or fortified margerine
2 tbsp all-purpose enriched flour
1 - Place corn, boiling water, milk and onion in a sauce pan.
2 - Simmer for 20 minutes.
3 - Rub through a sieve
4 - Brown flour and butter or fortified margerine together.
5 - Stir in the corn mixture.
6 - Simmer 5 minutes.
7 - Serve very hot.
