Buttered Lima Beans
For a family of five, buy 3 lbs of unshelled
lima beans or 1 1/2 lbs of shelled beans.
Always keep shelled beans in the refrigerator in a covered utensil until ready to use. Place beans and 1/4 cp water in a covered utensil. Bring to a
quick boil then switch to Simmer heat of a low
flame. Steam for 3o minutes. Remove from the
heat, add 1 tbsp butter or fortified margerine
or 2 tbsp cream.
