Green Beans and Corn
For a family of five, buy one lb of fresh
green beans. Wash and remove stem and blos-
som ends of the beans. Snap beans in 1 inch pieces.
Place 2 tbsp of butter or drippings and
3 tbsp of water, salt and pepper, and
beans into a covered utensil. Cover tightly. Cook
on high heat until steaming, then reduce heat to
simmer or very low flame. Steam for 20 min-
utes. Remove cover and add 2 cps of fresh corn which has been cut from the cob. Cover. Return to high heat untilsteam escapes from around the cover, then return to simmer or a very low flame and steam 10 minutes longer.
