Scalloped Potatoes and Bread Cubes
1 lb or 2 cps sliced raw potatoes
2 cps toasted bread cubes
2 tbsp shortening
2 tbsp all purpose enriched flour
2 cps milk
2 tsp salt
1/8 tsp pepper 1/2 tsp dehydrated parsley leaves
1 -Peel potatoes and slice 1/8 inches thick.
2 - Toast bread and cut into 1/2 inch cubes.
3 - Make a white sauce by melting the shortening, adding the flour and blending well.
4 - Add the milk slowly and cook until slightly thickened, stirring constantly
5 - Put a layer of potatoes into a greased casserole, then a layer of bread cubes,
another layer of potatoes and finish on top with bread cubes. 6 - Pour the hot white sauce over the potato mixture.
7 - Cover, bake 1 hour in a preheated 350 degree oven.
8 - Uncover last half hour to brown food.
