Summer Vegetable Medley
1 1/2 cps sliced onions
2 cps celery cut in strips
1 1/2 cps carrots cut into strips
1 cp green peppers, cut in strips
4 tbsp butter or fortified margerine
2 cps canned tomatoes
2 tbsp cornstarch
2 tbsp water
2 1/2 tsp salt
1/4 tsp pepper
1/2 cp sliced radishes
1 - Melt butter or margerine in a skillet.
2 - Add all the ingredients except the cornstarch and waqter.
3 - Stir together well and when steam is escaping freely, turn to simmer heat
4 - Cook 35 minutes stirring once while cooking.
5 - Mix water and cornstarch into a paste and stir into the rest of the ingredients.
6 - Cook 10 minutes longer. Total cooking time 45 minutes.
7 - Just before serving add 1/2 cp sliced radishes.
Serve on rice or prepared cereal. Serves 6
