Roast Leg O'Lamb
Wipe meat with a clean, damp cloth.
Rub roast with salt and pepper.
Place skin side down on a rack in an open roasting pan.
Place the roast in a 325 degree oven and roast about 35 minutes per lb.
The low temperature gives thre most uniformly cooked roast.
There is less spattering of the oven.
Less fuel is required and less watching
