1 1/2 lbs sliced pork liver
2 tsp salt
1/4 tsp pepper
1/4 cp all-purpose enriched flour
1 medium sized onion, chopped
3 tbsp butter or drippings
3 carrots, sliced thin
1 1/4 cps milk
1 - Parboil the liver.
2 - To do this, place liver in crock or pan, cover with boiling water,
and allow to stand a couple of minutes.
3 - Drain off water. Cut liver in small strips, sprinkle with salt and pepper,
and roll in flour.
4 - Fry onions in butter or bacon drippings, stirring frequently.
5 - Add the liver and fry until browned on all sides.
6 - Pour in milk, add carrots, cover and cook on low heat 15 minutes
or until thickened, stirring occasionally. Serve with cooked rice.
