1 lb pork liver
2 1/2 tbsp drippings
1/2 cp evaporated milk
1/2 cp uncooked quick-cooking oatmeal
1 1/2 tbsp finely minced onion
1 tsp salt
1/8 tsp pepper
1/3 cp all-purpose enriched flour
1 - Sprinkle both sides of the sliced liver with flour and brown slightly in the drippings.
2 - Remove liver from skillet and cool.
3 - Save skillet with remaining fat for browning patties.
4 - Put liver through a food chopper. Mix with the milk, oatmeal, onion, \salt, and pepper.
5 - Divide into 12 portions and shape into patties.
6 - Roll patties in the flour and brown slowly in fat remaining in the skillet.
7 - If there is not enough fat remaining in the skillet, add 1 tbsp more.
Serve with tomato sauce or egg sauce.
