Stuffed Flank Steak
2 lbs flank steak
2 tsp salt
1/4 tsp pepper
3 tbsp shortening
2 cps tomato juice
4 tbsp all-purpose enriched flour
1 clove garlic
1 - Cut garlic clove in two and rub flank steak on both sides.
2 - Season with salt and pepper.
3 - Spread stuffing evenly over steak and roll with fiber of meat.
4 - Fasten ends together with toothpicks, skewers, or if neither is available tie with string.
5 - Roll in flour and brown in hot grease in skillet.
6 - Add 1/2 cp of tomato juice, cover tightly and simmer about 2 hours or until meat is tender.
7 - It may be necessary to turn occasionally.
8 - To serve, remove skewers or string, place on serving platter.
9 - Add the remainder of the tomato juice which has been mixed with flour to skillet.
10 - Cook sauce until thickened then pour over the meat.
11 - Cut in slices across the fiber of the meat.
