Apple in Cottage Cheese Salad
3 apples, coarsely diced
1 cp diced celery
1/2 cp diced cucumber
1/4 cp sharp French Dressing
1 pt. cottage cheese
1/2 cp chopped salted peanuts
1 - Wash and dice unpeeled apples.
2 - Toss apples, diced celery and cucumber with French dressing until well coated.
3 - On each salad plate place crisp lettuce leaves then with a spoon, shape 1/3 cp
cottage cheese into rough ring.
4 - Fill each ring with apple mixture and sprinkle with chopped peanuts.
5 - Top with fluffy salad dressing or mayonnaise.
