Creamed Toast with Poached Eggs
4 tbsp butter or fortified margerine.
4 tbsp all-purpose enriched flour
2 cps milk
1/2 tsp salt
1/8 tsp pepper
5 slices toast
5 poached eggs
1 - Melt butter or margerine, add flour and blend well.
2 - Add milk and stir constantly until sauce thickens
3 - Add salt and pepper.
4 - Toast bread and keep warm until eggs are poached.
5 - Lay slices of toast on serving platter, pour boiling sauce over them,
then place one poached egg on each piece.
Sprinkle with chopped parsley and serve at once.
