Partial Whole Wheat Bread
3 cps milk
1 cp lukewarm water
4 tsp salt
1/2 cp molasses
4 tbsp shortening
1 tsp sugar
About 6 cps all-purpose enriched flour.
About 6 cps whole wheat flour
1 cake quick-acting yeast
1 - Dissolve yeast in lukewarm water, add sugar.
2 - Let stand 10 minutes, scald milk, add molasses and salt
3 - Cool milk to lukewarm, add yeast mixture.
4 - Combine flours and add all but 1 cupful.
5 - Hold that until it is definitely known to be needed.
6 - Some flours require more liquid than others.
7 - Then add the softened shortening, mix well and turn
out onto a floured board.
8 - Knead dough until it is elastic andn does not stick to the board.
9 - Place in a greased bowl, cover and allow to rise until doubled.
10 - This recipe makes 4 medium loaves.
11 - Place in greased tins which should be sufficiently large so tins
are 2/3 full when first molded. 12 - Let rise to tops of tins or until double in bulk.
13 - Bake in 350 d egree oven for 1 hour.
