1/2 cp yellow corn meal
2 cps boiling water
2 tbsp shortening
1/2 cp molasses
1 cake yeast
1/2 cp lukewarm water
4 3/4 cps sifted all-purpose enriched flour
2 tsp salt
1 - Stir corn meal very slowly into boiling water, stirring constantly.
2 - Boil 5 minutes, add shortening, molasses and salt.
3 - Cool. When lukewarm, add yeast which has been softened in 1/2 cp of lukewarm water.
4 - Add the flour for a stiff dough.
5 - Knead well and let rise until doubl in bulk
6 - Shape into 2 loaves. Place in well greased loaf pans, and
let rise until doubl in bulk again.
7 - Bake in preheated 350 degree oven for 1 hour.
