Corn Meal Cookies
1 cp shortening
1 1/2 cps sugar
1 tsp lemon extract
1/2 cp raisins
3 cps sifted all-purpose enriched flour
1 tsp baking powder
1 tsp nutmeg
1/2 tsp salt
1 cp yellow corn meal, uncooked
1 - Cream shortening, slowly add sugar, then eggs, beating well.
2 - Blend in the lemon extract. Dredge raisins with 1/2 cp of flour and add.
3 - Sift remaining flour with dry ingredients, and add.
4 - Mix well, drop by spoon and flatten out with a fork, or
roll out 1/8 inch thick and cut in desired shapes.
5 - Dough may be made into 2" roll, wrapped in waxed
paper and refrigerated until needed.
6 - Bake 10 minutes in a preheated 400 degree oven.
