1 3/4 cps scalded milk.
3 tbsp cornstarch
1/4 cp sugar
2 egg whites, beaten stiff (if desired)
1/4 tsp salt
1/4 cp cold milk
1 tsp vanilla
1 - Mix cornstarch, sugar and salt with cold milk.
2 - Add scalded milk to cornstarch mixture.
3 - Cook until mixture thickens, stirring constantly.
4 - Turn to simmer and continue cooking 15 minutes,
stirring occasionally, or if range hasn't simmer heat,
cook in a double boiler.
5 - Cool slightly. Add flavoring and egg whites.
6 - Mix thoroughly. Pour into mold and chill.
7 - Serve with Cocoa Syrup or Custard Sauce.
