Cereal Cheese Cake
1 tbsp plain gelatin
1/4 cp cold water
1 egg, separated
1/3 cp sugar
1/4 cp milk
1/4 tsp salt
1 cp cottage cheese(dry) put through a sieve
1 tbsp lemon juice
1/2 tsp grated lemon rind
1/2 cp cream or evaporated milk, whipped
Crumbs for top and bottom of cake
1 cp crushed corn flakes
1/4 cp melted butter or fortified margerine
2 tbsp sugar
1/2 tsp cinnamon
Mix all ingredients together
1 - Soften gelatin in the cold water, beat the egg yolk lightly,
add sugar, salt and milk and cook over low heat until of custard consistency.
2 - Add softened gelatin, stir until gelatin is dissolved.
3 - Add cottage cheese, lemon juice and rind. Cool.
4 - When the mixture begins to thicken, fold in whipped cream or
evaporated milk and stiffly beaten egg white. 5 - Place part of the crumbs in bottom of pan, add cheese mixture.
6 - Sprinkle top with remaining crumbs and chill thoroughly.
7 - When firm, unmold
