1 cp water
3/4 to 1 cp lemon juice
2 unbeaten egg whites
1 2/3 cps basic sugar syrup
2 tsp unflavored gelatin
1 - Soak gelatin in 2 tbsp cold water and dissolve in hot syrup
2 - Cool syrup, then add water and lemon juice.
3 - Place in bottom tray of freezing compartment with temperature
control set at coldest position.
4 - Freeze until firm.
5 - Remove to chilled bowl, add unbeaten egg whites, and beat until fluffy.
6 - Return to freezing compartment for about 30 minutes, or until
sufficiently warm to serve.
